The entire menu changes daily, thereby offering a seemingly
endless variety of exquisite dining choices. While offering
such a variety of delectable entrées is a constant challenge
for the chefs, it is one at which they excel (to the delight
of their guests!). A sampling of appetizers includes Avocado
and Snowcrab Crown with Nori Crisps and Honey Soya Dressing,
Venison Carpaccio with Pommery Mustard Aioli and Toast Points,
Smoked Carpaccio of Wahoo with Fresh Tomato and Sweet Onion
Confit, or Lobster Ravioli with Tomato Dill Hache and White
Wine Beurre Blanc.
Entrées offer such a selection as Cumin Baked Black
Rockfish Fillet over Whipped Cilantro Potato with Steamed Vegetables
and Apple Curry Sauce; Charbroiled Veal Chop stuffed with Gorgonzola
served with Buttered Vegetables and Mashed Sweet Yam with Bourbon
Sweet Corn Sauce; Rack of Lamb Crusted with Sundried Tomato
Tapenade accompanied with Potato Galette, Grilled Vegetables,
and Rosemary Jus; or Grilled Cornfed Breast of Chicken with
Barley Risotto, Asparagus Tips, and Tomato Beurre Blanc. After
dinner guests are invited to enjoy a cocktail in the cosy bar
and relax to outstanding local island entertainment.
