Pork marinated in rosemary with mustard sauce

Serves 4


  • 1kg rounds of tenderloin pork fillet
  • 1 teaspoon freshly ground pepper
  • 3 tablespoons fresh rosemary, chopped
  • 1 teaspoon fennel seeds
  • ½ teaspoon chilli flakes
  • Juice of half a lemon
  • ½ clove of garlic
  • 2 tablespoons olive oil
  • Feta cheese in small cubes
  • Salt and pepper

For the sauce:

  • 125ml olive oil
  • 40ml lemon juice
  • 15ml sherry vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper


  • First mix all the ingredients for the mustard sauce together and gradually add the 125 ml of olive oil.
  • Put the meat in a pan.
  • Mix all the ingredients for the marinade, add them to the meat and marinate for 30 minutes.
  • Grill the meat on both sides, add the mustard sauce and sprinkle with the small cubes of feta cheese.
  • Serve up with fried or oven potatoes
